wednesday night games...

We started playing Wednesday night games this week - it's a way for us to spend time with the kids without all the stress that usually happens on a day to day basis... It's a lazy dinner night, eaten altogether at the table while deciding what games we're going to play - this week we had homemade sausage rolls and played memory and go fish.






Steve has never played go fish before!! So I had to teach everyone - it was a little difficult for Douglas, cause we were playing with alphabet cards that had to be matched, but that was another reason for Wednesday night games - to help him with his reading and numbers and stuff.

Homemade sausage rolls
2 sheets puff pastry
6 sausages, skinned
2 rashers bacon, finely diced
1 carrot, finely grated
1/2 onion, finely diced
handful grated cheese

- zap the onion in the microwave for two minutes

- combine all ingredients, except pastry

- cut pastry sheets in half, allow to thaw slightly

- spread mixture in the middle of each pastry section, to the edges

- roll to make sausage roll, sealing edge with a brush of water

- cut each roll into pieces, I cut sizes depending on what meal

- glaze with milk, or egg wash (egg and milk mixed together)

- cook in hot oven (I use 200degrees) approx 30min

- allow to cool slightly before serving

These are great for lunches, we make chicken ones for weekends (just omit bacon and substitute chicken mince for sausages, cook a bit longer), and can be reheated in the microwave or eaten cold the next day - although there are really leftovers. Amounts can be increased easily, if more are needed (I don't usually make this small a batch, just happens that's what I had available on Wednesday.) The decor pastry box is also excellent, since I bought it, I haven't had any broken pastry rattling around in the freezer!!
