With just 28 sleeps to Christmas, it's time to start baking! These shortbread cookies took just a few minutes to mix up, and won't last very long because the kids love them!
Rich, buttery shortbread is only enhanced by the addition of cocoa to make a crumbly chocolate version of one of my favourite Christmas treats. I've been known to make batches and batches of shortbread as the big day draws closer, but this is so easy that I might see if I can pass it over to Douglas now that he's finished school for the year.
250g butter, softened
½ cup icing sugar (confectioners sugar)
1 ½ cups plain (all purpose) flour
¼ cup rice flour
¼ cup cocoa
Method
* start by placing flours and cocoa in a bowl, and whisking to combine.
* place butter in another boal, add icing sugar and cream until pale and fluffy
* add flour blend to butter mixture, and combine until a ball forms.
* place dough between two sheets of baking (parchment) paper, and roll out to 5mm (¼")
* place rolled dough on tray and freeze 30min
* cut frozen dough into required shape, and bake 20min 180°C (adjust accordingly)

This really got my attention when I saw it (eyes bigger than my belly!). Christmas is one of those times when I really get into baking biscuits. My favourite biscuits to make are the roll out dough, cookie cutter type. I love making them, I guess because the kids love them so much. #openslather

My daughter makes shortbread as a gift for teachers etc. I am not a huge fan of shortbread but it sure is a Christmas tradition.Thank you for linking up for #lifethisweek 46/52.
