The best sticky date anything ever

Sticky date pudding is synonymous with Christmas around these parts. Until recently, my kids avoided the traditional Christmas pudding, instead opting for Sticky Date pudding every time.




So it was kind of a no brainer when a friend suggested to me last year that sticky date pancakes would be the best thing ever. The challenge was set, and I have to tell you, it is entirely possible to eat too many pancakes!
With only 1 small electric fry pan to cook in, these pancakes took hours to cook the whole batch up. But the house smelled amazing the whole time, so who can argue with Christmas spices in February?!


If you have a go at making them yourself, they can be made ahead of time and reheated in the microwave, or on a low heat in the oven. We've already gone through our first batch, with the kids begging for more to be made this weekend.

Sticky Date Pancakes (with caramel sauce)

prep time: 15 MINScook time: 1 hourtotal time: 1 hours and 15 mins

ingredients:

Pancake batter
  • 125g pitted dates, finely chopped
  • ½ cup boiling water
  • 2 cups self raising flour
  • ½ cup plain flour
  • 2 Tablespoons brown sugar
  • ½ teaspoon mixed spice
  • 2 cups milk
  • 80g butter, melted
  • 1 egg
Caramel Sauce
  • 1 cup cream
  • 60g butter
  • ½ cup brown sugar

instructions:


  1. Place dates in heatproof bowl, pour water over, allow to sit 10min
  2. Place flours, sugar, spice in bowl, whisk gently
  3. Place egg, milk, butter and dates into dry ingredients, whisk together.
  4. Place frypan on low/medium heat. Brush with butter
  5. Pour ⅓ cup batter into heated pan, cook until bubbles appear on surface, then flip. Repeat with remaining batter.
Caramel Sauce
  1. Place all ingredients in saucepan over low heat.
  2. Once butter has melted, increase heat to medium and simmer 10-12 minutes until sauce has thickened.
To Serve
  1. Place 2 pancakes on each plate, top with vanilla ice cream, and drixxle sauce over top.
