Gingerbread Slice with Cream Cheese Frosting

Inside - taking gingerbread out of the traditional cookie, and mixing it with cream cheese, yum!

As the warmer weather ramps up around here, I start experimenting with Christmas recipes and ideas.


Gingerbread is a fairly recent taste acquisition for the kids, although I've always preferred spicy over sweet (which strikes me as strange, given my chocolate tooth.)

I have a Pinterest board dedicated to all things gingerbread, and love trying new ways to share the flavour.


This slice got better with age! Just like gingerbread cookies!

I only did a half mix of frosting, but it didn't spread far enough, and created quite a thin layer, so do the full mix and really enjoy the taste.

Gingerbread Slice with cream cheese frosting

prep time: 15 minscook time: 30 minstotal time: 45 mins
like the cookies, but in a slice with the lovely tang of cream cheese frosting on top.

ingredients:

Slice
  • 170g butter, softened
  • ½ cup brown sugar
  • 1 egg
  • 3 cups self raising flour
  • 1 ½ tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ cup treacle
  • ½ cup brown sugar

Cream Cheese Frosting
  • 250g cream cheese, softened
  • 125g butter, softened
  • 2 cups icing sugar
  • 1 tsp vanilla

instructions:

Slice
  1. cream butter, sugar and treacle
  2. in a separate bowl, add flour and spices, whisk to combine
  3. pour whisked flour into butter mixture, stir, mixture will look slightly dry
  4. line lamington tray (9"x13") with baking paper
  5. pour slice mixture into tray, press out with slightly damp hands
  6. bake 180°C for 30 minutes
  7. allow to cool slightly before frosting
  8. add egg, mix in
  9. in a separate bowl, add flour and spices, whisk to combine

Cream Cheese Frosting
  1. mix cream cheese and butter for 1 minute
  2. add vanilla and 1 cup icing sugar, mix for 1 minute
  3. add second cup of icing sugar, mix thoroughly
  4. spread over cooled slice

NOTES:

Can use molasses for a darker gingerbread
