~~ brown sugar shortbread ~~


I love this recipe, and made it several times last year, and probably will again this year. It comes from the Better Homes & Gardens (USA) Christmas Cookies magazine [2008] (this ISN'T the 2009 magazine that I also have)


~~ Ingredients ~~
250g unsalted butter, cubed, room temp
1/2cup brown sugar
1/4tsp apple pie or pumpkin pie spice (recipe at end)
2 & 1/4 cups plain flour

~~ method ~~
cream butter, sugar, spice together
mix in flour until combined
roll into balls, flatten slightly (or use shortbread mould)
bake 12-15min 180degrees

~~ review ~~
a lovely, crumbly, mildly spiced biscuit. we like a strong spice taste, so I add 1tsp of the apple pie spice (our favourite), and the whole batch gets eaten in a few days. Once again it took hours to bake these (and I gave up on rolling balls after three hours, and pressed it into a square cake tin and baked for twenty minutes)

~~ apple pie spice ~~
1/4cup ground cinnamon
1Tbs ground allspice
2tsp ground nutmeg
2tsp ground ginger
1/2tsp ground cardamom

~~ pumpkin pie spice ~~
1/4cup ground cinnamon
2Tbs ground ginger
2tsp ground cloves
1tsp ground nutmeg
1/2tsp ground cardamom
