The oven was hot and waiting for the baking trays.
All that was left was finding the lemon curd in the cupboard, and we'd soon be munching on lemon curd jam drops for afternoon tea.
My hand pulled thee jar out of the depths of the pantry.
There was water in it. And the curd had shrunk into a brown lump.
Turning the jar over, I saw December 2019 stamped firmly on the bottom.
Something had gone wrong.
But how was I going to make lemon curd jam drops now?
As I lobbed that messy gunk into the bin, I remembered the fresh lemons I bought in the weekly shopping.
And I knew I had plenty of eggs and butter.
So fresh lemon curd was now on my making list, and I'd have that fresh-from-the-oven cookie experience for afternoon tea!

Later that afternoon, once the cookies were eaten, cooled and packed away for tomorrow, I was faced with a conundrum.
I now had 2 jars of lemon curd, just waiting for a spoon to sink into their creamy depths, and I had to figure out what to do with them!
Cue a Pinterest hunt, and some of the yummiest looking recipes now added to my must-try list.
